Late Victorian Fool’s Gold Locket

Most of the iron pyrite (aka fool's gold) we see in antique jewelry is left with its rough, crystalline surface intact. That's how it mimics real gold - even though the color is off, with its green, silvery hue - and it's unique-looking. Why did the jeweler here cut and polish it flat, even though pits and irregularities remain? I would ask him if I could.
